Balsamic Roasted Veggies

  • 1 Zucchini (Quartered Lengthwise)
  • 1 yellow squash (Quartered Lengthwise)
  • 1 red bell pepper (Sliced into 1/4″ strips)
  • 1 onion (Sliced into 1/4″ strips)
  • 1/3 cup Balsamic Vinegar
  • 3 cloves Garlic (finely minced)
  • 2 tbsp Honey
  • 1 tsp Thyme
  • Salt & Pepper to taste
  • Thoroughly whisk vinegar, garlic, honey, thyme, salt & pepper in a bowl.
  • Pour over vegetables until completely covered.
  • Marinate for 45 minutes-1 hour
  • Grill on outdoor grill over medium heat until veggies are tender and have grill marks.
  • You can also place in a roasting pan, and broil in oven.
