Berbere Spice Mix

  • 10 dried ancho red chilies  
    I discard most of the seeds. If you prefer heat that will melt the fillings out of your teeth, use the seeds.
  • 4 tsp coriander seeds
  • 4 whole allspice berries
  • 8 cloves
  • 1 tsp fenugreek seeds
  • 2 tsp cumin seeds
  • 2 tsp black peppercorns
  • 1 tsp cardamom seeds
  • 1/3 cup tablespoons paprika
  • Make sure your paprika is smoked or sweet, not hot! (See my previous note about melting your fillings!)
  • 1/2 tsp nutmeg
  • 1 tsp ginger
  • 1/2 tsp cinnamon
  • 1.5 tsp turmeric
  • 2 tsp salt

Toast the whole spices for 3-5 minutes in a hot cast iron skillet. Be certain to stir or shake the spices within the pan to keep them from burning.

Place the toasted whole spices in a grinder, and pulse until finely ground. Add the remaining spices and pulse to mix.  Take care not to breathe in the smoke that will come off the spices once you open the grinder, or you’ll find your nasal passages on fire.
