Hot German Potato Salad

  • 1 pound red potatoes, sliced thin
  • 6 slices of thick-cut smoked bacon
  • 1 onion halved and sliced thin
  • 2 cloves minced garlic
  • 2 eggs
  • 1/2 cup water
  • 1/4 cup spicy mustard
  • 3 tbsp white vinegar
  • 2 tbsp all purpose flour
  • salt & pepper to taste
  • 3 hard-boiled eggs, sliced
  1. Boil potatoes and drain.
  2. Chop raw bacon into small bits and brown in a cast iron skillet on medium heat.
  3. When the bacon has finished cooking, drain the grease (but add 2 tbsp back).
  4. Add onion and cook until caramelized.
  5. Add garlic and stir. Saute an addition 2 minutes.
  6. Add flour and incorporate to form a roux.
  7. In a separate bowl, whisk together raw eggs, water mustard & vinegar.
  8. Pour into bacon & onion mixture. Heat until it thickens.
  9. Incorporate the sauce and the potatoes.
  10. Gently fold in the sliced hard boiled eggs. 
  11. Serve hot.
