Pretzels & Beer Cheese

Beer Cheese

  • 3 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 2 cups shredded sharp cheddar cheese
  • 8 oz beer (ale or a strong lager)
  • 1 tsp ground pepper
  • 1 tsp salt
  • 1/2 tsp ground chipotle pepper
  • 2 tsp fresh chopped garlic

Pretzels (easy)

  • 2 pkgs pillsbury thick crust pizza
  • kosher salt
  • 3/4 cup baking soda

Pretzels (homemade)

  • 1 cup warm water
  • 1 pkg fast rise yeast
  • 1 tbsp sugar
  • 3 tbsp olive oil
  • 1 tsp salt
  • 3 c flour
  • kosher salt
  • 3/4 cup baking soda

Beer Cheese

  1. Melt butter over medium heat.
  2. Add flour and mix
  3. Add milk and whisk until mixture thickens
  4. Add spices
  5. Add cheese, and mix until completely melted.

Pretzels (homemade)

  1. Mix water, yeast, sugar, oil, salt and 1 cup flour with a stand mixer, and let sit for 20 minutes.
  2. Add additional flour, knead, and let rest until doubled. (about an hour)
  3. Punch down dough.
  4. Pull off sections approximately the size of gumballs and roll each into a ball.
  5. Let rise for 30 minutes.

Pretzels (easy)

  1. Slice and roll into balls approximately the size of gumballs.
  2. Let rest fo 15 minutes.

Pretzels (both)

  1. Pre-heat oven to 400º.
  2. Fill a large saucepan 3/4 full with water, and add 3/4 cup baking soda, and place on high heat.
  3. Once water is at a boil, place dough balls in water for 4-5 minutes. in batches.
  4. Drain on a paper towel.
  5. Place boiled dough balls on a greased cookie sheet.
  6. Sprinkle with kosher salt,
  7. Place in oven for approximately 10 minutes until evenly browned. (You may need to turn cookie sheet in the oven depending on how evenly your oven bakes.
